I have a ridiculous sweet tooth, and I´ve always had a weak spot for chocolate (as seen here, for example). When I stumbled upon these cute looking chocolate & coconut cubes, I knew I needed to give them a try.
The recipe is extremely easy. In fact, the hardest part is waiting a few hours for the preparation to harden in the fridge! The well-balanced combination of a sharp dark chocolate and a sweet coconut makes this a perfect TV snack, or a great hostess gift (which is less dangerous for your waistline, for sure!) I´m pretty sure I´m going to make these very soon again, and swapping dark and milk chocolate for my favorite white one! What do you think?
* 100g of dark chocolate
* 100g of milk chocolate
* 60ml of cream
* 200ml of sweet evaporated milk
* 160g of dessicated coconut
Lay out a square mould (20x20 cm) with pastic film. Melt the dark chocolate first and stir in half the cream, (30ml) pour it into the mould and distribute evenly. Put into the fridge for 15 minutes.
Mix evaporated milk with dessicated coconut and lay it out on the dark chocolate.
Melt milk chocolate, stir in the rest of cream (30ml) and pour it onto the coconut mixture. Again, distribute it evenly and put it into the fridge.
You shoud wait 12 hours, but of course, I wasn´t able to be THAT patient! 6 hours was my breaking point, but I find it was enough. You can cut out small cubes (2x2 cm) or sticks (2x6cm), it´s up to you. Either way, they are delicious!
