Baked Parmesan Tomatoes


Even though the fall is officially here, we´ve been enjoying the last few days of indian summer. It´s the last ocasion to pull out the summer clothes and make the best of the sunny weather to have a diner outside. This recipe has caught my eye on Pinterest, and I immediately knew that I needed to try it while the fresh tomatoes were still available on the farmer´s market. I added a thin coat of pesto between the tomato and the slice of parmesan, and I more than enjoyed this delicious dish and its perfect combination of flavors.
