I´ve been wanting to prepare my own first cheesecake for longer than I dare to admit. And finally, the past
weekend´s family reunion was just the perfect occasion. I opted for a no-bake version that turned out wonderfully: The crust was sweet and crunchy and the cream was full of flavor. It´s truly the best dessert you can ask for: easy to prepare, yet really impressive by its taste. Are you tempted?
You´ll need:
400g of cookies (I used honey & hazelnut combo)
200g of melted butter
3 gelatine sheets
a pot of cooking cream
300g of cream cheese
100g of sugar
3 teaspoons of lemon juice
250ml of whipped cream
Mix the crushed cookies with the melted butter. Press them into a round baking pan.
Put gelatine sheats into a bowl with water and let them rest for 5 minutes. Bring cooking cream to the boil, withdraw the sheets from the water and let them melt in the cream. Let cool down.
In a bowl, beat cream cheese, sugar and lemon juice (optional: I also added a teaspoon of vanilla extract). Add the cooking cream with gelatine and the whipped cream. Spread into pan and place in refrigerator overnight.
